
Jau Sattu Halwa
Ingredients:
- One cup Natureship's Jau Sattu (Barley Flour)
- 3/4 cup jaggery powder (adjust sweetness to taste)
- 4 tbsp ghee (clarified butter)
- 2 cups water
- 1/2 tsp cardamom powder
- 2 tbsp chopped nuts (almonds, cashews, pistachios) Optional: 1 tbsp raisins
How to make it steps:
- Prepare the Jaggery Syrup: In a saucepan, add 2 cups of water and jaggery powder. Heat until the jaggery dissolves completely. Strain to remove impurities and set aside.
- Roast the Sattu: In a heavy-bottomed pan, heat the ghee. Add Jau Sattu and roast it on low-medium heat until it turns golden brown and emits a nutty aroma.
- Combine Syrup and Sattu: Slowly pour the jaggery syrup into the roasted sattu while stirring continuously to prevent lumps.
- Cook the Halwa: Keep stirring the mixture until it thickens and starts leaving the sides of the pan. Add cardamom powder and mix well.
- Garnish and Serve: Stir in the chopped nuts and raisins. Transfer the halwa to a serving dish, garnish with additional nuts, and serve warm.
PRO TIPS:
- For a richer taste, add 2-3 tablespoons of milk along with the water.
- Serve the halwa in small bowls or plates and sprinkle a pinch of saffron strands for a royal touch.
