
Kulthi Sattu Chutney
Ingredients:
- Kulthi sattu (roasted horse gram flour) – 4 tbsp
- Garlic cloves – 4 to 5
- Green chili – 1 (adjust to taste)
- Onion (finely chopped) – 1 small
- Tomato (optional, finely chopped) – 1 small
- Fresh coriander leaves – 2 tbsp (chopped)
- Mustard seeds – ½ tsp
- Dry red chili – 1
- Tamarind pulp or lemon juice – 1 tsp
- Salt – to taste
- Mustard oil or any cooking oil – 1 tsp
- Water – as needed
How To Make : Steps
1. Prepare a chutney base:
In a bowl, mix kulthi sattu with a little water to make a smooth, lump-free paste.
2. Grind the chutney (optional step for smoother texture):
In a mortar-pestle or mixer grinder, crush or grind garlic, green chili, and a pinch of salt to a coarse paste.
3. Mix together:
Combine the garlic-chili paste with the sattu paste. Add chopped onion, tomato (if using). coriander leaves, and tamarind pulp or lemon juice. Mix well.
4. Seasoning (Tadka):
- Heat 1 tsp oil in a small pan.
- Add mustard seeds, let them splutter.
- Add dry red chili and curry leaves.
- Pour this tadka over the sattu chutney and mix well.
5. Adjust consistency:
Add a bit of water if you want a thinner chutney. It should be like a thick dip.
