Power Packed Sattu Parantha
For the Dough:
- 2 cups whole wheat flour (atta)
- ½ tsp salt
- Water (as needed)
- 1 tsp oil or ghee (optional)
For the Stuffing:
- 1 cup Sattu (roasted gram flour)
- 1 small onion, finely chopped
- 2 tbsp coriander leaves, finely chopped
- 1 tsp ajwain (carom seeds)
- 1 tsp jeera (cumin seeds)
- 1 tsp black salt (or regular salt)
- 1 green chili, finely chopped (optional)
- ½ tsp roasted cumin powder
- ½ tsp amchur (dry mango powder)
- ½ tsp mustard oil (adds authenticity and enhances flavor)
- Water (just enough to bind the mixture)
For Cooking:
- Ghee or oil (for roasting)
Instructions
Step 1: Prepare the Dough
1. In a mixing bowl, add whole wheat flour and salt.
2. Gradually add water and knead into a soft dough. Apply a little oil and let it rest for 15 minutes.
Step 2: Prepare the Sattu Stuffing
3. In another bowl, mix Sattu, onion, coriander, ajwain, jeera, black salt, green chili, cumin powder, amchur, and mustard oil.
4. Add a few spoons of water, just enough to bind the mixture together. The stuffing should be moist but not watery.
Step 3: Stuff & Roll the Parantha
5. Take a portion of dough and roll it into a small disc (about 3-4 inches).
6. Place a generous amount of Sattu stuffing in the center.
7. Seal the edges and flatten slightly. Roll it out gently into a parantha.
Step 4: Cook the Parantha
8. Heat a tawa (griddle) and place the rolled parantha on it.
9. Cook on medium flame, flipping occasionally, until golden brown spots appear.
10. Apply ghee or oil on both sides and cook until crisp and well-roasted.
Step 5: Serve & Enjoy!
11. Serve hot with curd, pickle, or chutney for a delicious, wholesome meal.
